Delicate, yet flavoursome. It has a fine glossy gently glycerol texture that’s shot through with flint, and pure cool acidity. A subtle fennel frond perfume, discreet pine-lime flavour, perfume of vanilla bean and sweet dried herb, and a bell clear finish of superb length.

Goes wonderfully with chicken, fish dishes and risotto.
